It often includes olive oil, garlic, and herbs like oregano, and the sauce may be thickened slightly as it simmers.

Ingredients:

  • 1 rabbit, cut into portions
  • 3-4 garlic cloves, finely chopped
  • 1 onion, finely chopped
  • Juice of 2 lemons
  • 200g chicken broth or water
  • Salt
  • Pepper
  • Oregano
  • Olive oil

Instructions:

  1. Heat olive oil in a pot and sauté the rabbit pieces on both sides until they are nicely browned.
  2. Add the onion and garlic, continuing to sauté for 1-2 minutes, being careful not to burn the garlic to avoid bitterness.
  3. Add the lemon juice, salt, pepper, and oregano, and sauté everything together for another 2 minutes.
  4. Finally, add the water, lower the heat, and simmer until the rabbit becomes tender.
  5. Carefully turn the rabbit pieces to avoid breaking them, adding a bit more water if needed during cooking.
