Ingredients for the Liver
- 500g beef liver
- 2 onions, thinly sliced
- 1 garlic clove, finely chopped
- 30g white wine
- 50g water
- A small handful of parsley, finely chopped
- A little flour
- Salt
- Pepper
- Olive oil
Instructions for the Liver
- In a pan, heat 3 tablespoons of olive oil over medium heat. Sauté the onions and garlic until golden, then transfer them to a bowl.
- In the same pan, add a bit more oil. Dredge the liver in flour, then place it in the hot oil, browning each side for about 3 minutes.
- Return the onions to the pan and sauté everything together for 1 minute. Deglaze with the white wine.
- Add the water, parsley, salt, and pepper. Let it simmer until the sauce thickens.
Ingredients for the Rice
- 250g long-grain rice
- 550g water
- 1 small onion, finely chopped
- 1 carrot, grated
- Salt
- Olive oil
Instructions for the Rice
- In a saucepan, heat a little olive oil and sauté the onion and grated carrot.
- Add the rice, salt, water, and a bit more olive oil. Let it simmer for about 20 minutes or until the rice reaches your desired texture.
