Ingredients for the Liver

  • 500g beef liver
  • 2 onions, thinly sliced
  • 1 garlic clove, finely chopped
  • 30g white wine
  • 50g water
  • A small handful of parsley, finely chopped
  • A little flour
  • Salt
  • Pepper
  • Olive oil

Instructions for the Liver

  1. In a pan, heat 3 tablespoons of olive oil over medium heat. Sauté the onions and garlic until golden, then transfer them to a bowl.
  2. In the same pan, add a bit more oil. Dredge the liver in flour, then place it in the hot oil, browning each side for about 3 minutes.
  3. Return the onions to the pan and sauté everything together for 1 minute. Deglaze with the white wine.
  4. Add the water, parsley, salt, and pepper. Let it simmer until the sauce thickens.

Ingredients for the Rice

  • 250g long-grain rice
  • 550g water
  • 1 small onion, finely chopped
  • 1 carrot, grated
  • Salt
  • Olive oil

Instructions for the Rice

  1. In a saucepan, heat a little olive oil and sauté the onion and grated carrot.
  2. Add the rice, salt, water, and a bit more olive oil. Let it simmer for about 20 minutes or until the rice reaches your desired texture.
