Ingredients:
- 1 kg lamb
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 4 ripe tomatoes, grated
- Salt
- Pepper
- Sweet paprika
- 1 tablespoon olive oil
- 300g orzo (kritharaki)
Instructions: In a pot, heat the olive oil and sauté the lamb until it is browned on both sides. Then add the onion and garlic and sauté them for 2 more minutes. Next, add the grated tomatoes and salt. Add enough water to cover the meat, and let it simmer over medium heat for about 1 to 1 1/2 hours until the meat becomes tender. Once the meat is ready, add the orzo. Continue cooking on low heat, stirring frequently to prevent the orzo from sticking. If necessary, add more water. Five minutes before turning off the heat, add the pepper and sweet paprika.
