Ingredients
- 400 g sausages, cut into bite-sized pieces
- 1 Florina (red) pepper, finely chopped
- 2 ripe tomatoes, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 bay leaf
- 50 g white wine
- 50 g water
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions for the Sausage Sauce
- Heat the olive oil in a pot and sauté the sausage pieces on all sides until browned.
- Add the onion, garlic, and red pepper. Sauté for 1 minute, then deglaze the pan with the white wine.
- Add the tomatoes, bay leaf, salt, pepper, paprika, and water. Simmer for 15-20 minutes until the sauce thickens.
- Add more water if needed to achieve the desired consistency.
For the Penne

- 500 g penne pasta
- Salt
- Olive oil
Instructions
- In a large pot, bring water to a boil, add salt, and once boiling, add the penne.
- Cook for about 20 minutes or until the pasta is cooked to your preference.
- Drain the penne well and return them to the pot.
- In a pan, heat olive oil until very hot and then pour it over the penne to infuse them with the oil’s aroma.
