Ingredients

  • 500 g ground beef
  • 60 g rice
  • 1 egg
  • 1 onion, blended
  • A pinch of cumin
  • A little parsley
  • A pinch of oregano
  • A small amount of ginger
  • 2 potatoes, diced
  • 2 large carrots, sliced into rounds
  • 300 g water
  • Salt
  • Pepper
  • 1 tablespoon flour
  • Juice from 1 lemon
  • Olive oil

Instructions

  1. In a bowl, combine the ground beef with the rice, egg, cumin, parsley, oregano, ginger, onion, and 2 tablespoons of olive oil. Knead the mixture well to combine the ingredients, then cover and refrigerate for at least 30 minutes.
  2. Meanwhile, peel and chop the potatoes and carrots.
  3. In a pot, add the water, potatoes, carrots, olive oil, salt, and pepper. Bring to a boil over medium heat.
  4. While the vegetables are cooking, shape the meat mixture into small meatballs (youvarlakia) and add them to the pot.
  5. Let the soup simmer for 35-40 minutes until the meatballs are cooked through and the vegetables are tender.
  6. In a separate bowl, take a ladle of broth from the pot and let it cool slightly. Add the lemon juice and dissolve the flour in the broth.
  7. Pour the mixture back into the pot, stir, and let the soup simmer for another 5 minutes before turning off the heat.
